Observation (CORRECTED DURING INSPECTION): Cooked noodles, meats, vegetables in large plastic bins stored at room temperature. The staff stated that the food items were just delivered and ready to be stored inside the cooler.
Corrective Action(s): Staff stored all cooked foods inside the cooler at 4C. Do not store any potentially hazardous food items at room temperature. They must be stored cold or hot at < or = 4C or > or = 60C respectively.

Comments

- General sanitation satisfactory.
- Handwashing stations (front/back) supplied with hot/cold running water, soap, paper towels.
- Two compartment sink available for warewashing. Sanitizer available at 100ppm chlorine bleach concentration.
- Surface sanitizer available in spray bottles at 100ppm chlorine concentration. Keep more sanitizers in the kitchen.
- Dry storage area has adequate space and wire racks.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Temperature control:
- All coolers at < or = 4C
- All freezers at < or = -18C
- All hot holding units > 60C.
- Begin daily temperature log for all coolers.
