NOTE: poison bait boxes observed in the basement -although there are no foodstuffs here there are disposables. Poisons should only be used outside. Mice will not fully digest the poison and will defecate it out along with the droppings contaminating the area before they expire. No infractions observed -maintain. Temperature Controls: -All fridges at or below 4 deg C NOTE: although there are no issues with Walk-in cooler temperatures recommend using plastic fridge flaps which will help maintain cool temperatures -Hot held foods at or above 60 deg C -High temperature washer final rinse 73.4 deg C at plate level (first cycle) Chemical Controls: QUAT sanitizer buckets/dispenser >200ppm as per test strips Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used Daily tracking sheets maintained for fridges, hot holders and mechanical washer -yes General Sanitation very good In-Use Utensils such as the coffee spoon in ice water are dishwashed/replaced every hour as per worker -good do not exceed 4 hours -all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath -no signs of pests Professional pest control comes on a regular basis: Abell Pest Control comes in regularly -no activity Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
