Cooling units less than 4 C. Freezer around -15 C. Lids closed at inspection - good. Hot holding above 60 C. Hand wash stations good. Quats at main feed OK (200 ppm) *Make sure to change sani-buckets every 1 to 2 hours max. Noticed relatively clean solution in buckets measured close to no residual. Likely cloths and regular counter wiping eats up available sanitizer. Premises looks nice and clean at time of inspection.
