Observation: Carpet mats are still being used in the prep area (front of the kitchen, where donair broiler and prep cooler is located at).
Corrective Action(s): Make sure to replace the carpet mats and install rubber mats instead. Send a copy of the invoice of the rubber mats to the health inspector for verification. Carpet mats are NOT approved to be used in the kitchen as it collects moisture, grease, and dirt. This will contribute to poor overall sanitation of the kitchen.
