- Kitchen maintained in sanitary condition
- Hot and cold running water present
- Handsink supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures:
- Kitchen 3 door cooler 2C
- Fridge/freezer 2C/-17C
- Kimchi cooler 0/1C
- Thermometers present in coolers to monitor temperatures
- Freezer were functioning and maintaining product in a frozen state
- No signs of pest activity noted at time of the inspection. Pest control contract in place with monthly service.
- Bleach sanitizer solution present in spray bottle to sanitize food contact surface. Concentration measured 200ppm.
- High temperature dishwasher operational. Final rinse was 80.1C at dish surface.
- Probe thermometer present for verifying cooking, hot holding and storage temperatures.
*Reviewed Temporary Food Premises application for upcoming Church Bazaar event on June 8, 2019 with Office staff and Caretaker. Reviewed items being prepared/sold/served on-site and storage need for each item. Reviewed proper cooling procedures for items prepared in advance. Verified handwashing facilities (sink with hot and cold running water, liquid soap and paper towel) present in room where kimbab is prepared.
