301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1.The lids and containers storing dry foods appeared dirty throughout the kitchen, hallway, and dry storage areas.
2.Pots and pans were stored close to the floor in the kitchen where rodent droppings were sighted.
3.Scoops were stored above the dry food bins' lids and on metal rack. Scoops must washed and sanitized prior to using.
Corrective Action(s): 1.Clean all the lids and containers of dry foods.
2. Rewash pots and pans and store them at least 6 inches above the floor so the floor can be cleaned.
3. Store scoops in a clean container.
Correction date: immediately.

Observation: Rodent droppings (looks like rat's) were found:
-underneath the metal rack where the pots and pans were stored
-on the floor beside the cooler in the dry storage area
-on the floor under the shelves in the hallway.
-behind the stove in kitchen
Corrective Action(s): Remove rodent droppings and clean and sanitize the areas noted above with 100ppm bleach.
Corrective action: 3 days.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: The following areas required cleaning:
1. Sliding doors of the coolers in the dry storage area.
2. Fume hood appeared greasy
3. The fronts of the stoves and the knobs
4. The wall behind the stove underneath the fume hood.
5. Spice cabinet interior surfaces and doors (inside and outside)
6. Knife rack
Corrective Action(s): Clean the items noted above.
Correction date: 1 week.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: Newspaper was used to line the shelf in the hallway.
Corrective Action(s): Remove the newspaper from the shelf. The shelf must have a finish that is smooth, easy to clean and non-absorbent.

Comments

General Comments:
-Hand washing sinks fully stocked with liquid soap and paper towels. Hot and cold running water provided.
-Low temperature dishwasher at 100ppm chlorine detected at the plate (temperature was 56C)
-30 people
-Temperatures:
sliding door coolers at 4C and 2C
chest freezer at -19C
-bleach available
-Towels were found in soiled water. Discussed with committee member that they must be properly laundered or sanitized in at least 100ppn bleach solution (2mL per L of water)
-Food Safe Level 1 certificates not available at time of inspection. Operator to send copy of certificates to EHO's email. Ensure that operator has valid Food Safe certificate and at least one staff must have Food Safe certification in the absence of the operator.
-Member mentioned that 15-30 people dine here each time every Tuesday and Friday.
-Hours of operation are 10:30 to 1pm, and 6pm to 9pm.
-This inspection had to be done by appointment because the committee members are not there all the time.
