302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Staff was asked to demonstrate three compartment sink set up. Staff used diluted bleach to make final sanitizing rinse resulting in third compartment less than 200ppm Chlorine. CORRECTED DURING INSPECTION. It was determined that solution in bucket is sanitizer solution and NOT undiluted bleach. Health Inspector and staff located undiluted bleach bottle. Staff used two measuring containers to one sink of water half full.

Corrective Action(s): Ensure all sanitizer solution buckets are LABELLED.
Ensure staff use undiluted bleach for third compartment sink. Use one half sink full of water for 2 small, plastic cupfuls of bleach..

- Facility in EXCELLENT sanitary condition
- No evidence of pests
- Handsinks adequately supplied. Excellent hand washing procedures observed - EXCELLENT!
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Freezers achieving temperatures of less than or equal to -18 degrees Celsius
- Hot Holding achieving temperatures of greater than or equal to 60 degrees Celsius
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm chlorine in spray bottle and unlabelled bucket with lid - (****LABEL THIS BUCKET***)
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Three functional sink plugs available for use observed
- Raw meat stored away from Ready to Eat food items
- All lids on food items in cooler and freezer units
- Hair restraints in use
- Back door closed during inspection
- Light covers in place
- Cooler handles and seals in good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
- Staff Personal items kept separate from kitchen equipment - No Cell phones or other personal effects stored in food preparation areas - EXCELLENT!
