Corrective Action(s): This was brought to the attention of kitchen staff and the item immediately discarded

Observation (CORRECTED DURING INSPECTION): Hot holding unit only hot holding at 50 to 52c. Staff member had turned down the unit. All PHF's were discarded.
Corrective Action(s): NEVER turn down a hot holding unit. PHF's MUST be hot held at no less than 60c.

Underside of salamander unit requires cleaning
