Coolers:
Bar cooler - temperature is <4C/40 F - good.
2 door prep cooler by hand sink - is working and temperature is at 6 C. Food in this cooler (chutney and produce) - ok at 6C if foods are lower risk.
If you are using this cooler for any higher risk foods, such as yogurt, lower temperature to 4C/40F or colder.
Check cooler temperatures daily.
Hot holding procedures:
Today no hot holding observed.
Food safety plan reviewed with operator: Hot foods are cooked/reheated on the stove to above 74C/165F and then held hot above 60C/140F. If the food temperature falls below 60C for more than 2 hours, food is discarded. Note that hot rice is made frequently and not hot held for more than 2 hours. Time tracking required.
