All coolers operating at </=4 C; freezers at </= -18C; no hot-holding at the time of inspection (just prior to opening for service)
Bleach sanitizer available in spray bottles and bucket for soaking wiping cloths at 100 ppm
High-temperature dishwasher reached > 71C at the plate level upon final rinse cycle (min/max probe thermometer)
Food protection and storage is good
No signs of pests observed; traps throughout
Permit is posted with valid decal
FoodSafe certified staff present
General sanitation is good. Additional organization in the bar area is planned. Aim to have all items at least 6" off the ground to facilitate cleaning and pest control activities
