Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishware, utensils, or equipment washed in the high temperature dishwasher were not properly sanitized as the unit was not in good working order. 2-compartment was not available for the sanitizing of larger food equipment since the plumbing for the sanitary discharge pipe had been removed.

Observation: The only designated hand washing station in kitchen was not available since the necessary sanitary pipes were removed.

Observation: Sanitary pipe for the hand washing station was removed and not food handlers in the kitchen did not have access to a hand washing station in the kitchen.

Follow up inspection conducted
The kitchen has been thoroughly cleaned.
High temperature dishwasher has been temporary converted to a low temperature dishwasher until the necessary part(s) of the unit arrives to make the required repairs. A concentration of 100ppm of chlorine was achieved at plate level. Ensure all utensils, dishware, and equipment are re-washed in the dishwasher.
The plumbing for the hand washing station and 2-compartment sink have been reconnected and no leakage was noted.
All wiping rags were stored in a sanitizing bucket. Concentration was at 100ppm.

The following action item is required:
Contact health department for re-inspection when the high temperature dishwasher has been fully repaired.
