Observation (CORRECTED DURING INSPECTION): The paper towel dispenser and soap dispensers, at the handwashing sinks in the kitchen, are empty. Staff are unable to wash hands properly.
Corrective Action(s): Immediately fill the paper towel dispenser and soap dispensers so staff can wash hands property. During the inspection, staff filled them.

Observation: Found food containers not covered in the walk-in-cooler. Food can become contaminated with items falling into them.

Observation: Aluminum foil and cardboard is being used to cover equipment to protect it from grease and food splashes. These materials are not washable and will attract pests with the accumulation of grease and food debris.
Corrective Action(s): Throw away all cardboard and aluminum foil every night, and replace it with new materials every morning to prevent pest infestation.

Observation: The light level in the kitchen is too low and it is hard to see when surfaces are dirth and need cleaning.
Corrective Action(s): Replace all broken light fixtures and light bulbs with new, working ones to increase the lighting level.

Comments

A routine inspection was completed:
- Coolers 4C or colder; freezers -15C or colder; hot holdining units above 60C; and thermometers present.
- Low temp dishwasher had [Cl2] of 50ppm during the rinse cycle. Test strips present.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- All foods stored in food grade containers; majority of containers covered; foods stored in groups with raw proteins separate or below RTE foods; and foods stored 6" off the floor on shelves.
- No expired foods in use or for sale. FIFO rules being followed.
- General sanitation level is good. Exhaust canopy is clean and the next professional cleaning is due in May 2023, as per service sticker.
- No signs of pests. A monthly contract with a professional pest company is in place for monitoring.
- FoodSafe certified staff present.
