Observation (CORRECTED DURING INSPECTION): * Some tongs were being stored in sanitizer in main kitchen area and this is not acceptable cleaning process; staff reminded to clean and sanitize all food equipment not just sanitize only
Corrective Action(s): * DO NOT store food equipment such as tongs in sanitizer between use (eg. tongs, etc) as these must be properly cleaned first and then sanitized after

Observation (CORRECTED DURING INSPECTION): * Food equipment was found being stored on floors in both dishwashing area and prep area and this is unsanitary practise; food was found uncovered in one of the storage coolers beside the back door-- this was discarded as it was not protected from contamination
Corrective Action(s): * Ensure all food equipment stored OFF floors and stored properly; Ensure all food covered in storage coolers to protect food from contamination

Observation: * Cleaning to be done along prep line in main kitchen on more frequent basis to remove build up of grime/debris

Observation: * Food equipment was being stored on food prep counter and this area used to prep food -- not storage shelf; operator to set up additional storage shelving as needed for proper food equipment storage

* Main dishwasher was found to be at 50 ppm chlorine residual at plate surface (internally)
* Cold-holding units were 4'C/40'F or colder
* Freezer units were -18'C or colder
* Sanitizer was available and at 200 ppm quaternary ammonium concentration in buckets to store wiping rags; change sanitizer frequently (every 1-1/2 hours)
* Note: do not store food equipment such as tongs in sanitizer solution between use; food equipment must be properly cleaned and sanitized(via dishwasher) after use
* Note: provide additional shelving to store food equipment such as containers, etc.; food equipment storage areas are limited so additional shelving to be considered
* Hand washing stations had liquid soap and paper towels
* Glass washer at bar was not working properly at beginning of inspection and operator had to prime the sanitizer line; after many attempts to prime the line the final rinse was at 50 ppm chlorine residual internally at glass surface
* Note: ensure staff handling food wear proper hair protection (eg. hair nets)
