Observation (CORRECTED DURING INSPECTION): 1. One insert of cooked rice was left under ambient room temperature at the back kitchen. Internal food temperature measured at 17C.
2. Ten 200 mL containers of yogurt were stored at the front display cooler and measured with an internal food temperature of 8.5C. Operator stated they were made yesterday.
Corrective Action(s): Cooked rice was moved back into a functional cooler. Ten containers of yogurt were discarded. Ensure all potentially hazardous food is stored at 4C or less.

Observation: 1. Various containers of food stored inside under the counter cooler were not covered.
2. Two bags of onions were stored beside a bucket of dishwasher detergent at the dry storage area.
3. Metal inserts with cooked food was stored on the floor inside the walk-in cooler.
Corrective Action(s): 1. Cover all food with a food-grade covered during storage such as saran wraps to protect them from contamination.
2. Store food away from chemical. Move the detergent away to a different location.
3. Move the inserts on the shelving unit. Do not store any food on the floor.
Correct by: immediately.

Observation: Front display cooler measured with an ambient air temperature of 9C.
Corrective Action(s): Service / fix the display cooler to ensure an ambient air temperature of 4C or less can be maintained. Do not store any potentially hazardous food inside until then. Correct by: Apr 25, 2023.
