Storage unit cooler (display) less than 4 C. Bulk of food storage in this unit.
Freezers ok.
- Prep cooler used for minimal food storage during day. Continue to keep lid closed when not directly making products. Discussed with operator and he monitors temps in unit and recovers temperatures. Monitor for need to service if temps. continue to be slow to recover. Coolant recharge?
- Bleach solution in spray bottle not well defined. Label ratio on bottle and follow instructions. Test paper bleached out. Use maximum 1/2 tsp bleach to fill line of water to achieve 100 to 200 ppm. - Completed.
- Handwash facilities in place.

New unit purchased. general sanitation good.
