Observation (CORRECTED DURING INSPECTION): Chicken rotisserie is still not being washed and sanitized after each use. Rotissarie was used the previous night and was still found to have dried chicken debris on the racks. This is a continuing violation. Aluminum foil wrapped pans with chicken debris from the previous night was also found stored above the oven
Corrective Action(s): Equipment must be washed and sanitized at the end of each night, not the next day. All equipment must be maintained in a clean and sanitary condition. Leaving food debris in the over and pans may also allow for potential attraction of pests. Continued repeat violation may result in the issuance of violation ticket(s) and or a Public Health Act Correction Order.

Comments

-Follow-up inspection October 30, 2017.
-Front handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Cloth towels are no longer being used for wiping hands. Cloth towels are being used to remove chicken skin from chicken and towel is disinfected with bleach.
-Operator is not washing and sanitizing rotisserie oven rack after each use - operator states racks are washed and sanitized the next day, prior to roasting chicken.
