Observation (CORRECTED DURING INSPECTION): One bottle labeled as quats sanitizer had no detectable sanitizer.
Corrective Action(s): Bottle was emptied, refilled at the sanitizer dispenser, and tested at 200 ppm quats. Ensure that sanitizer is maintained at concentrations required for effective sanitizing of food contact surfaces (e.g. 200 ppm quats). Change sanitizer as often as needed to maintain these concentrations. Verify concentration with test strips.

Routine inspection conducted:

- Walk in cooler at 3 degrees C.
- Glass beverage cooler at 2 degrees C
- Under counter (1-door) cooler at 3 degrees C.
- Preparation (2-door) cooler at 3 to 4 degrees C (above) and 3 degrees C (below)
- Reach in (2-door) freezer at -21 degrees C
- Hot holding units (steam table, Alto Shams) at internal food temperatures of 60 degrees C or more.
- Probe thermometer is available on site for internal food temperature checks
- Food is stored off the ground, raw animal foods and ready-to-eat foods are properly organized, and prepared items are generally covered.
- Scoop and tong handles are stored outside of food product.
- Quaternary ammonium compounds (quats) sanitizer available at 200 ppm*
- Low temperature dishwasher measured 44 degrees C and 50 to 100 ppm chlorine in rinse residual at utensil surface
- Three compartment sink supplied with hot and cold running water, three sink plugs
- Hand washing sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels in dispensers.
