Observation:
There are walls and corners in the facility that have dents, chipped paint, and exposed drywall. These surfaces are not sealed or cleanable, and may attract pests. This violation was mentioned in the past inspection and it has not been correct (required date was September 2017).
Corrective Action(s):
Repair all damaged walls and corners in the facility. Putty, sand, and paint the areas so the surfaces are smooth, level, durable, sealed, and cleanable. Failure to address this violation by the correction date will result in further enforcement action.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezer was -17C; hot holding units 60C; and thermometers present.
- High temperature dishwasher was 74.4C during the rinse cycle, at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottles had [Cl2] of 200ppm.
- Foods stored in food grade containers; covered; labeled; date coded; in groups with raw proteins on lowest shelves below RTE foods; and 6" off the floor on shelves.
- Cooling procedures being followed for soups. Soup was allowed to cool to room temperature and then placed in the cooler, half covered. Temperature was 18C.
- FoodSafe certified staff present.
- Food handlers use utensils to process foods, and hand washing done frequently.
- No expired foods for sale or in use. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- The 2-compartment prep sink waste pipe is repaired and water no longer is leaking.
- The small food service store (in hallway) has been closed until further notice. All food processing and sale is being done in the main kitchen facility.
