Observation:
- Holes observed on the wall behind the mechanical dishwasher.
- Gaps observed around the pipings on the wall behind the mechanical dishwasher.
- Large dough sheeter equipment observed with food debris build up. Operator stated that this equipment is not in use anymore,
- Extra HVAC units with filters were being stored inside the dry storage room. Filter materials were disintegrating.
Corrective Action(s):
- Fill in the holes/gaps. Ensure the area is dry before applying any sealant and the area should be kept dry until the sealant is completely set.
- Remove the large dough sheeter and the HVAC units from the premises.

Observation:
- Grime and food debris build up observed around the door perimeters of the mechanical dishwasher.
- Dead cockroaches observed around the dishwasher doors.
- Undercounter coolers observed with food & grease debris on surfaces.
Correction:
- Clean and sanitize all areas mentioned above.
Comments

- Major clean-up has been done inside the kitchen. Operator stated that the floor was pressure-washed. Some areas required additional cleaning (Work top counters, on top of the dishwasher, behind the mixer) and they were cleaned at the time of inspection.
- Tea station faucet was repaired.
- Dishwasher parts have been ordered and they are scheduled to be repaired this week.

*Ensure to place insect monitor traps throughout the kitchen as only tincat traps are seen now.
*Continue monitoring pest activity and repeat the spray treatment as necessary (as per the pest control company's recommendation).
