Observation (CORRECTED DURING INSPECTION): A container with a cooked rice stored at room temperature (the owner stated: it is from last night). The container with rice was found front of the 2-compartment sink on a plastic bucket.
Corrective Action(s): Immediately. Rice must be discarded.
Note: The owner discarded rice at the time of inspection.

Comments

- General sanitation is satisfactory.
- Handsinks (in kitchen, front staff service area and washroom) are supplied with hot and cold running water, liquid soap and single use paper towels.
- All coolers (sushi bar cooler, undercounter cooler (sushi), prep cooler, glass door cooler in front area, small domestic cooler - are all maintained at less than 4C.
- Refrigerator: cooler at 4C/freezer at -18C.
- Freezers at -18C
- Hot holing units (for soup & rice) are greater than 60C (soup at 75C).
- Sushi rice measured at pH4.
- High temperature dishwasher - satisfactory.
- Food storage organized; food is covered and off the floor.
- No evidence of pest activity is noted at the time of inspection.
