Observation (CORRECTED DURING INSPECTION): Raw eggs were held in inserts out at room temperature. Measured to be at 23C.
Corrective Action(s): Eggs were discarded at time of inspection. If holding eggs on ice during busy times, the ice water level MUST be high enough such that the egg inserts can be fully submerged in the ice. Alternatively, use time-tracking stickers on inserts and discard eggs every 2 hours.

Observation (CORRECTED DURING INSPECTION): Hot water not available at hand sink in main cook line.
Corrective Action(s): Operator placed "do not use" sign above hand sink at time of inspection. Other hand washing stations are accessible for use in the meantime.

Observation: Inside of ice machine (condenser panel) requires cleaning and sanitizing.
Corrective Action(s): Ensure ice machine is emptied, cleaned, and sanitized more frequently. All surfaces inside ice machine must be thoroughly scrubbed during each cleaning.

Observation: Hot water tap for hand sink in main cook line was not working; hot water not available at this sink.
Corrective Action(s): Repeat issue. Replace the faucet. All sinks must have hot and cold running water available at all times.

Comments

* Many violations noted were repeat violations. Note that repeat violations in the future may result in further enforcement actions.
- ALL hand washing sinks must have hot and cold running water, liquid soap, and paper towels at all times.
- Raw eggs must be properly held at 4C or colder, or discarded every 2 hours using appropriate time-tracking methods.
- Ice machine must be properly cleaned and sanitized on a regular basis to prevent mould/mildew/biofilm growth.

General comments:
- All other hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in all sanitizer buckets and from dispenser
- Low-temperature chemical dishwasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle.
- All coolers were measured to be at 4C or colder
- All freezers were measured to be at -18C or colder
- All hot held items were measured to be at 60C or hotter
- Accurate thermometers available
- Test strips available
- Food stored off the floor and properly covered
- No signs of pest activity noted
- Note: Dipper well must be working and in use if ice cream scoops are not washed after each use.
