-Paper copies of the temperature/ dishwasher/ glasswasher records are available now. Ensure that they are recorded every day.
All coolers were < 4 C.
All freezers were < -18 C.
Quats sanitizer solution was at 200 ppm.
The dishwasher had 100 ppm chlorine.
The glasswasher had 25 ppm Iodine.
No evidence of pests, pest control records available on site.
General sanitation was satisfactory.
