Observation: Low temperature chlorine sanitizing washer is inoperative due to a leaking line to a chemical vat. Operator is aware of the issue and indicated service repair already scheduled to come later today.

In the meantime operator is Manual Washing ware -reviewed process: Wash -rinse -sanitize with bleach >100ppm chlorine residual as per the sign posted at 2-compartment wash sink

Menu must be part of your existing approved otherwise amended Food Safety Plans will be needed for review. Health Permit must be conspicuously displayed for the public at the retail area.
