Observation (CORRECTED DURING INSPECTION): One bottle of milk and noodles stored in the under the counter cooler were measured at 8C.
Corrective Action(s): Move the aforementioned food into a different functional cooler. Potentially hazardous food must be stored at 4C or less.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Insert with Quats sanitizer used to store used knives was measured with a concentration of 50-100 ppm. At least 200 ppm is required to properly sanitize food equipment.
Corrective Action(s): Staff discarded and refilled the insert with 200 ppm Quats sanitizer and ice. Ensure either maintain the Quats sanitizer concentration at 200-400 ppm or bath temperature below 4C.

Observation (CORRECTED DURING INSPECTION): Frozen chicken breasts were thawing under ambient room temperature. Chicken breasts were measured at 0C - 3C.
Corrective Action(s): Move the chicken breast back into a functional cooler. Frozen food must be thawed properly in a functional cooler or under cold running water.

Observation: Under the counter cooler at the start of cook line was measured with an ambient air temperature of 8C after leaving the thermometer inside for 40 minutes.
Corrective Action(s): Service / fix the aforementioned cooler to ensure an ambient air temperature of 4C or less can be maintained. Correct by: Oct 25, 2024.
