Observation:
1) Bucket below the pop dispensing machine is collecting pop from the drain pan. The pooling pop will attract and breed flies and mice.
2) Bin below the exhasut canopy is collecting water from a leak in the roof. The pooling water will attract and breed flies and mice.
Corrective Action(s):
Empty the bucket and bin every night, and wash the bucket and bin in the dishwasher to remove any food debris.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The kitchen floor has accumulated food and debris on it. This will attract pests.
Corrective Action(s):
1) A deep scrubbing and cleaning of the kitchen floor requires to be done. Use hot water and degreaser to clean the floor. Ensure the floor under all shelving units, equipment (oven, deep fryers, etc.), sinks (dishwashing sink), and along the base of all walls are scrubbed clean. Increase the frequency this is done.

2) Purchase more shelving units so all flats of bottled water and drinks are stored off the floor. This will encourage and allow staff to clean the floor, especially along the base of walls.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation:
At time of the inspection, there were no staff members that possessed a valid FoodSafe level 1 certificate. There also must be one staff present that has the knowledge on processing and handling food safely.
Corrective Action(s):
Have the manager and staff enroll and obtain the FoodSafe level 1 certificate, or a recognized equivalent course.

Comments

A routine inspection was completed:
- Coolers below 4C; freezer was -20C; and thermometers present.
- High temperature dishwasher had a rinse cycle temp of 73.9C at the plate's surface, as per max/min thermometer.
- Hand sinks stocked with liquid soap, paper towels, and running hot and cold water.
- General sanitation level is satisfactory. Improvement needed in the mentioned areas.
- Exhaust canopy and filters are clean.
- No signs of pests.
- Sanitizer in spray bottles had Quats strength of 200ppm.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups; and majority of food stored 6" off the floor.
- No expired foods in use or for sale. FIFO rules being followed.
- All surfaces and equipment are in good working order.

ACTION
- Purchase metal shelves with wheels, to store all bottled drinks on. The lowest shelf shall be at least 6" off the floor, and/or high enough that a broom and mop can get under the shelf.
- Have the manager and other staff members obtain a valid FoodSafe Level 1 certificate, or a recognized equivalent course.
- Deep cleaning of the kitchen floor (using hot water, degreaser and scrub brush) is needed. Focus on the floor under equipment, shelves, sinks, and along the base of all walls.
