Observation (CORRECTED DURING INSPECTION): 1) Chlorine sanitizer supplies were empty at time of inspection. 0ppm chlorine residual in the low-temp dishwasher.
2) Operator failed to prime sanitizer line after replacing sanitizer supply bucket.
Corrective Action(s): Sanitizer supply was replaced and line was primed by inspector at time of inspection.
*Check sanitizer concentration in the dishwasher DAILY prior to using the dishwasher every shift.
*Educate dishwashing staff on correct procedures to monitor dishwasher sanitizer level and how to correctly replace depleted chemicals when they run out.

*Remind employees to re-stock supplies immediately if soap or paper towels run out.

*Remove mouse droppings and sanitize surfaces (with bleach solutions) every morning/evening until pest activity is eliminated.
*Comply with all recommendations of the pest control technician towards eliminating rodent activity in the premises.
