Observation: 'Cut coolers' were not in good working order. Temperature was at 53F. The manager noted that she has called for repair. All food items were moved to other working cooler at the time of inspection.
Corrective Action(s): Do not use the coolers to store potentially hazaroud foods, including cut vegetables, until they are repaired. Ensure that the coolers are able to maintain foods at or below 4C.

Comments

- Handsinks are maintained with hot & cold running water, liquid soap and paper towel
- 200ppm QUAT sanitizer buckets and spray bottles present at multiple locations
- Low temp dishwasher achieved 50ppm chlorine at plate's surface
- Temperature log is in place
- Containers where cut ingredients are stored are in ice bath
- Internal temperature of garlic butter in hot holding measured 40C. The staff noted that the hot holding unit has been turned on not too long ago.
* Ensure that hot holding unit is pre-heated to 60C before storing any potentially hazardous items such as garlic butter
- Temperatures of refrigeration units other than the cut coolers noted above were adequate (<4C for coolers and <-18C for freezers)
- No signs of pest activity noted at the time of inpsection

* Noted accumulation of dust on ice machine fan. Clean the noted area.
* Noted accumulation of food debris and crumbs under the mat where sanitary cups are stored in the bar area. Clean the noted area and keep it in the regular cleaning schedule.
