Observation (CORRECTED DURING INSPECTION): 1) Operator placed a container of raw shrimp into a prep cooler directly on top of inserts of onions and bean sprouts.
2) Scoops were found stored directly inside ingredients.
Corrective Action(s): 1) Do not store raw foods above ready-to-eat foods. This may potentially contaminate ready-to-eat foods. Raw shrimp were relocated at the time of inspection.
2) Scoops must be stored in a sanitary manner to prevent potential contamination of ingredients. Scoops were removed at the time of inspection.

Comments

-Follow-up inspection to September 26, 2017.
-Bleach sanitizer solution was properly prepared at 200ppm at the time of inspection.
-Staff members practicing proper hand hygiene at the time of inspection. Single use gloves are properly discarded when staff change duties or gloves become potentially contaminated. Staff are no longer using rubber gloves used for warewashing to handle food.
-Staff are no longer adding water to liquid hand soap. Handwash stations easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Chemicals properly labelled at the time of inspection.
*2 garbage bags with flour were found in the dry storage closet. Operator stated the flour bag broke and item is to be discarded. Flour was discarded in the complex garbage bin at the time of inspection. Garbage bags can never be used for storage of foods - bags may contaminate foods.
