High-temperature dishwasher noted 71.1C at the plate after final rinse cycle. Invoice reviewed with operator.

Sanitation in area next to high-temperature dishwasher, 2 bar areas, underneath 2-compartment sink, and under cook line equipment improved. Ceiling panels above cook line and dishwashing area noted in sanitary condition. Operator to ensure noted areas are maintained in a sanitary condition with a food grade sanitizer to prevent pest attraction.

Tap at handwashing station across from walk-in cooler noted in good working condition. Cracked tiles on backsplash of 2-compartment sink sealed to prevent moisture damage. Operator to ensure area is finished with a smooth, non-porous, and easily washable surface.

OUTSTANDING: Additional food safe lids have been ordered as per operator. Bulk items in dry storage area to be covered with food grade lids to protect items from contamination. Walk-in cooler to be reorganized with shelving labels to separate cooked and raw foods. Foods must not be stored on the floor to protect items from contamination.

OUTSTANDING: Dry storage shelving and palettes to be maintained with a smooth, non-porous, and easily washable finish to encourage frequent cleaning.
