Observation: Arrived on-site ambient air temperature 9 - 10 C. Waited ~ 10 minutes as operator advised that it was on defrost cycle. Rechecked ambient temperature to be 7 C. Internal temperature of olive miscela 7.5 C. Technician was contacted again.
Corrective Action(s): No potentially hazardous items kept in fridge at time. For the time, you can keep non-potentially hazardous foods only, but will need to obtain a new fridge to compensate lost cold holding capacity. Alternatively can try and repair unit but MUST be able to maintain food < or = 4 C.

Some cleaning completed, but piece of cake still observed on floor in between the two freezers. PULL OUT freezers and do deep clean.
