Observation (CORRECTED DURING INSPECTION): Fried chicken and beef stew cooked in advance were not properly cooled. Internal temperature of fried chicken stored at room temperature were at 20C and internal temperature of beef stew cooled in the walk-in cooler were at 15C. Both of the food products were discarded.
After cooking, food products must be transferred immediately to a metal shallow pan and or metal tray to ensure food products are cooled to 20C within 2 hours or less. After than, keeping foods in the shallow pan and metal tray, place them in the walk-in cooler to ensure they cool from 20C to 4C in 4 hours.

Observation (CORRECTED DURING INSPECTION): Wiping rags were stored directly on food contact surfaces in the back kitchen. Ensure all wiping rags are stored in a sanitizing solution.

Observation: Delivered food products were stored directly on the floor. Ensure all food products are stored at least 6 inches off the ground to prevent contamination of food products.

304 - Premises not free of pests [s. 26(a)]
Observation: Cockroaches noted in the following: dry storage underneath the stairway, back exit door, and upstairs dry storage area.
Operator has contract with 2 separate pest control companies to help rectify the cockroach problem. Premises was fumigated on Dec 19, 2017 and secondary pest company was on-site yesterday. Operator is to send all pest records to the health department.
If cockroach problem persists, a second fumigation may be required. When the premises is fumigated, no food preparation can take place and business must be closed. Prior to re-opening, all food contact surfaces must be properly washed and sanitized.

Routine inspection conducted and the following were noted:
Walk-in cooler and stand-up coolers were at 4C. Ensure all cooler units are monitored daily with an accurate thermometer to ensure temperature is less than 4C.
Foods held in the hot holding units were at least 60C internally.
Chlorine dishwasher achieved a final rinse concentration of 50ppm. Ensure unit is monitored daily with chlorine test strips to ensure it is in good working order.
Freezer units at -18C.
