Wiping cloths are being stored in 100 PPM chlorine residual.
Dishwasher final rinse reached 75 degrees Celsius at the plate surface.
Hollandaise measured 65 degrees Celsius in the warmer.
Liquid soap and paper towel at handsinks.
Note: Dishwasher detergent bottle is running low and will need changing very soon.
