Observation: Mouse droppings observed around dishwashing area and on ledge above dishwashing sinks.
Corrective Action(s): Remove droppings and sanitize all surfaces with a strong bleach solution. Ensure to monitor for new droppings DAILY and clean and sanitize as neccessary.
A new pest control company has been hired - email all invoices to Ying.Tan3@fraserhealth.ca

Observation: Back door was open at time of inspection.
Corrective Action(s): As previously discussed, back door must be kept closed at all times to prevent pest entry.

Observation: High-temperature dishwasher does not consistently reach 71C at the dish surface during the rinse cycle.

Comments

- High-temperature dishwasher reached 71C at the dish surface after several runs. Service technician has been contacted for dishwasher - ensure a minimum temperature of 71C is reached at the dish surface during the rinse cycle every time dishes are being washed (see violation code 308).
- Hand sink properly supplied. Reminder that paper towel dispenser must be working properly.
- Bleach sanitizer solution for sanitizing food contact surfaces available at 100 ppm (chlorine).
- All coolers were measured to be at 4C or colder
- All freezer temperatures were satisfactory
- Ventilation canopy maintained in sanitary condition.
- Batter mixing machine was in use at time of inspection - ensure the entire machine is thoroughly cleaned and sanitized at the end of each day.
- Food stored properly covered
- Dry storage area satisfactory. Reminder that all food must be stored in pest-proof containers with tight-fitting lids, and must be stored off the floor.
- Washroom sinks properly supplied.
- New pest control company hired. Ensure to continue with bi-weekly services and email all invoices to Ying.Tan3@fraserhealth.ca
