*General sanitation very good. No pest issues observed during inspection.
*All cooler and freezer temperatures satisfactory. Note: one under-counter freezer requires a new thermometer (current unit broken).
*Utensils are washed at appropriate frequency. Note: discussed blender jug washing/rinsing with operator during inspection - ensure this is carried out at least every 4 hours (full wash/rinse/sanitize steps).
*High-temperature dish sanitizer reached a final rinse temperature of > 71 C at the plate level.
*Food packaged and protected from contamination in cooler/freezer storage.
*Hand sinks equipped with warm water, liquid soap and paper towels.
*No change in wheatgrass grinder cleaning procedures. Ensure approved sanitation plan for restaurant is followed.
*Dry storage maintained in tidy condition.
*Bleach sanitizer available at 200ppm in spray bottle. Note: store may be switching over to quat sanitizer. Discussed requirement for accurate quat dilution at 200ppm with operator. Test strips have been provided by chemical supplier.
