Observation (CORRECTED DURING INSPECTION): Dough mixer and vegetable slicer had old food debris residue caked on and had not been used yet today.
Corrective Action(s): Disassemble both pieces of equipment and thoroughly clean and sanitize all parts.
As previously discussed, do not leave any equipment dirty overnight.
Staff cleaned and sanitized both the dough mixer and vegetable slicer at time of inspection.

Observation: Some food items in walk-in cooler and in prep coolers were uncovered. One bag of onions was stored directly on the floor.
Corrective Action(s): Ensure all food is stored properly covered and off the floor.
Correct by: Immediately.

Observation: - Significant amount of food/sauce spatter on walls, counters, doors, and sides of equipment throughout kitchen.
- Interiors of prep coolers require deep cleaning and sanitizing
- Significant amount of grease/debris on ventilation canopy filters
- Dry ingredient food storage bins require cleaning and sanitizing
Corrective Action(s): Clean and sanitize all areas/items noted above. Ensure equipment doors and handles are cleaned and sanitized on a daily basis. Ensure deep cleaning of insides of coolers, ventilation canopy filters, food storage bins, and walls/floors in hard to reach areas are cleaned and sanitized weekly at a minimum.

Comments

- Hand sinks were properly supplied with hot and cold running water, liquid soap, and paper towels
- Bleach sanitizer solution available at 100 ppm in sanitizer bucket
- High-temperature dishwasher reached 71.7C at the dish surface during rinse cycle
- Frozen fish was thawing at time of inspection under cold running water - good. Ensure to only thaw frozen foods under cold running water or in the cooler overnight.
- All coolers were maintaining temperatures of 4C or colder. Top right corner of pizza prep cooler was measured at 2.5C at time of inspection - good.
- All freezers were maintaining temperatures of -18C or colder.
- Ice cooling wand available for use - good.
- Accurate thermometers available
- Good separation of raw and ready-to-eat food items. Reminder that all food must be properly covered and stored off the floor.
- General sanitation requires improvement (see violation code 306 above).
- No signs of pest activity noted at time of inspection
