Observation (CORRECTED DURING INSPECTION): - Plate of cooked chicken stored at room temperature. Internal temperature of chicken measured 26.3C. Operator reported chicken had been reheated and then left on the prep table until ordered.
Corrective Action(s): - Cooked chicken was discarded at the time of the inspection. Potentially hazardous food must be held at 60C or higher in a hot holding unit or refrigerated at 4C or colder

Observation: - Hole noted at base board in dry storage room which could allow for pest entrance/harbourage.
- Back door was open with loose fitting screen door and gaps noted which could allow for pest entrance.
Corrective Action(s): - Fill/seal hole to prevent pest entrance/harbourage
- Install screen door which fits tightly so that there are no gaps. Until this is addressed, keep back door closed. [Correction date: 1 week]

Observation: - Desk being used to stored tea and tea service items has a worn surface in which moisture has penetrated. Particle board is damaged and splintering. Surface is no longer smooth, impervious and washable. Additionally, a desk is not intended for use as a prep table or counter within a food premises.
Corrective Action(s): - Remove desk from premises. Replace with prep table suitable for intended use within food premises. [Correction date: 1 week]

Observation: - Toaster oven which is no longer in use was stored in mop sink.
Corrective Action(s): - Remove toaster oven from premises if no longer in use. Do not store anything in mop sink. Mop sink must be accessible to dispose of mop water. [Correction date: 1 week]

Comments

- General sanitation satisfactory and appears to have improved since previous inspections. Continue to adhere to regular cleaning schedule and ensure floor area around dishwashing sink and area around grease trap are cleaned regularly.
- Handsinks supplied with hot and cold running water, liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder) and freezers were maintaining product in a frozen state:
- Prep cooler (back) 3C
- 2 door reach in cooler (back) 3C
- Domestic fridge/freezer 3C/-14C
- Undercounter small cooler 2C
- Sushi display cooler 0-1C
- Small chest freezer -15C
- Large chest freezer -17C
*2 door undercounter reach in cooler not in use. Danby beverage cooler 6C - no potentially hazardous foods stored inside.
- Food in coolers was stored in a manner to prevent contamination - wrapped/covered. Dry storage area was organized with all items stored off of the floor.
- Hot holding of miso soup was 65C
- Dishwasher functional. >50ppm chlorine detected on dish after cycle. Chlorine test strips present for monitoring sanitizer residual. Operator reports this is completed daily.
- Bleach sanitizer solution present in bucket for use with wiping cloths on food contact surfaces.
- No signs of pest activity noted at time of the inspection. Pest control contract in place with monthly service. Service report provided from most recent visit (8-Aug-2019) for review.
- Operator present and holds valid Foodsafe level 1 certificate (valid until Nov. 2021)

*Operator had been cooking chicken and tempura prodcuts at Foodies on Board (nearby permitted food service establishment) on the weekend when they are not in operation. Cooked chicken was being stored in the cooler and reheated for service. This agreement was not approved and at this time is not permitted. Additionally, temperature abuse was noted with the cooked chicken in the inspection today.
A proposal would need to be submitted for review which outlines the agreement (days/times of use) and includes procedures which outline how the food is being processed and transported in a manner which makes it safe to eat (updated food safety procedures).
