Observation (CORRECTED DURING INSPECTION): Walk-in cooler measured 10C ambient temperature, chicken souvlaki measured 8.9 C internal. Operator had called for a technician to service the unit several hours prior
Corrective Action(s): Unit serviced, measured 2C at the end of the inspection.
Reviewed temperature records: Ensure that staff are writing ACCURATE readings of the temperature. several weeks in a row prior were noted to be identical temperatures daily.

Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher measured 0 ppm chlorine at the dish surface after 5+ cycles
Corrective Action(s): Reviewed with staff on temporary 2 compartment manual warewashing procedure. Ensure that dishes are washed and rinsed in compartment 1, then soaked in sanitizer solution for 1 minute in sink compartment 2.

Observation: Evidence of rodent activity observed as follows:
-glue trap on BOH countertop next to the oven: 2 dead cockroaches
-glue trap on top of wall mounted electrical equipment above the dredging station (calimari): 10+ dead cockroaches
-power adapter on wall plug next to the microwave found to have build up of cockroach debris
Corrective Action(s): Ensure that the above noted issues are remedied. Operator must maintain the facility in clean and pest free condition.
