Observation (CORRECTED DURING INSPECTION): Vegetable cutter was found to have green pepper debris from the previous night.
Corrective Action(s): Vegetable slicer and all equipment must be properly cleaned and sanitized after each use. Vegetable slicer was cleaned and sanitized at the time of inspection.

Observation: Individual on-site did not have FoodSafe Level 1 or equivalent training in the absence of the operator. This is a repeat violation. Operator has valid FoodSafe Level 1, but does not arrive in the facility until approximately 1 hour after the facility opens for business.
Corrective Action(s): In the absence of the operator, at least one person in the facility must have FoodSafe Level 1 or equivalent. Either additional staff must be trained in FoodSafe Level 1 or the facility can begin operations later in the day, after the person with valid FoodSafe Level 1 arrives. Continued non-compliance with the FoodSafe requirement will result in the issuance of a violation ticket.

Comments

-Walk-in cooler was at 4C.
-Pizza prep cooler was at 4C (top and bottom).
-Chest freezer was at -15C.
-Cleaning and sanitizing carried out in 2 compartment sink. Sink plug and bleach available. Bleach prepared at 200ppm at the time of inspection.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer spray bottle labelled and tested at 200ppm.
-Meat slicer was clean and well maintained. Slicer is properly disassembled for cleaning and sanitizing.
-General food storage practices good at the time of inspection. Foods properly stored off the ground and covered.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
