*Ensure the door seals/gaskets for all under-counter coolers and freezers are cleaned daily to remove sugary fruit residue. *Discussed date coding system for all wraps and proteins/sauces and other ingredients. Turkey and chicken must be date coded once thawed using both "start date" and "use-by" dates. All wraps must be identified with best before or use by dates. Ensure that original best before dates for proteins is not exceeded when date labelling the wraps and salads. Any wraps not sold after the "use by" date must be discarded as per Corporate food safety plan. Walk-in freezer below -15 degrees C. Under-counter cooler (near the drive-thru): -1 degree C. All other coolers below 4 degrees C. Wraps and panini display cooler below 4 C. Vitality juice dispenser: 1.5 degrees C. Liquid soap and paper towels available at the hand sink. Spray bottle of sanitizer contained 200 ppm chlorine bleach. General sanitation is satisfactory.
