Observation: Underside of counters above all food preparation surfaces require cleaning due to build up of splattered food product.
Sandwich coolers require cleaning due to heavy food spillage build up.
Knife rack holders require cleaning. Holders must be cleaned frequenlty due to their locations
Correction: Underside of all shelving directly above food preparation surfaces MUST be cleaned and sanitized DAILY.
Recommend installing magnetic holders situated well above food preparation surfaces so that they are not easily contaminated.
