202 - Food not processed in a manner that makes it safe to eat [s. 14(1)] Observation (CORRECTED DURING INSPECTION): Chicken was half cooked and left on the counter only to be fully cooked on order prior to serving. During the time of the inspection, there were no customers in the restaurant (after lunch rush). Temperature of the meats were around 50 degC. Corrective Action(s): As discussed, DO NOT half cook meats. After lunch/dinner rush, all fully cooked meats must be cooled and stored inside a cooler (below 4 degC) or cooked and then stored in a hotholding unit (60 degC or above). Violation Score: 5

304 - Premises not free of pests [s. 26(a)] Observation: Some rodent droppings noted in between the two freezers in the back. Corrective Action(s): Clean this area. Clean the sugar spills under and around the prep table across from the large coolers. Violation Score: 3 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: The water at the handsink in the back kitchen sprays out of the sink each time you try to use it. Corrective Action(s): Fix/replace the tap unit as discussed. Violation Score: 3

DO NOT MIX DETERGENT WITH THE BLEACH SOLUTION. KEEP SPRAY BOTTLES CLEAN AND FREE OF GREASE BUILD-UP. -Washrooms and hand sinks are fully equipped -Dishwasher rinse was at 78 degC
