Observation (CORRECTED DURING INSPECTION): Croissants placed on tray on display counter, unprotected.
Corrective Action(s): Keep croissants behind the display case. If you leave it out unexposed, customers could potentially contaminate it (touch it, sneeze on it, etc).

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): Walk in cooler ambient air temperature at 8 deg C. Fan temperature also at 8 deg C. Contents of walk in cooler include: prepackaged hams/deli meats, one carton of eggs, and breads. Operator indicated that they have just opened and they were moving foods in/out of the walk in cooler since arriving.
Corrective Action(s): Operator lowered temperatuer setting on walk in cooler. Within 10 minutes, ambient air temperature was 3.4 deg C and food surface temperatures were <4 degC.
Temperature logs onsite indicate that temperatures are conisitently below <4 deg C. Ensure to continue monitoring these temperatures daily.

Bleach sanitizer in rag bucket at 100 ppm chlorine
3 comp sink in back with bleach available onsite
No signs of pests during inspection : mice traps and boxes onsite -->ensure to check them at least once a month to see if there are any rodents inside. If you see any rodents, you will need to contact pest control company.
