Correct within 2 months. Copy of health operating permit replacement form was provided during the previous routine inspection in case you are unable to find your permit to operate on-site (refer to the permit replacement form for details).

Follow up inspection:

-Milk undergoing the cooling process was measured to be within the critical limit.
-Staff informed that they had placed the hot milk containers into an ice water bath before placing them into the refrigeration unit.
-Time-temperature control measure for the cooling process was reviewed with staff: Cool milk quickly from 60 to 20 degrees C within 2 hours maximum and then 20 to 4 degrees C within 4 hours maximum.
-Cooked tofu was not observed to be held at room temperature.
-Operator developed a template for time-tracking procedures for the tapioca pearls and reviewed with staff on how to maintain these procedures. One batch of pearls is made at a time and is discarded after 4 hours upon removing it from temperature control as per Operator and staff.
-A plastic bag was available near the handsink to discard single-use paper towels after handwashing practices.
-Operator is aware to obtain a garbage bin for this handsink this week.
-Operator and staff were washing hands properly at the time of inspection.
