- Cheese Display Cooler (across from Olives Self-Serve): 1 deg C

- Temperature monitoring logs appear regularly maintained.
- Food storage practices appear satisfactory - food is protected from contamination.
- 200 ppm Quats sanitizer in spray bottles available fro sanitizing food contact surfaces. Quats test strips available to verify Quats concentration.
- High Temperature Sanitizing Dishwasher: 72.1 deg C at dish surface; Minimum Wash and Final Rinse Temperature readings achieved as per unit data plate.
**High Temperature Dishwashing Log does not appear to be accurately maintained. Dates do not match up. Log for December appears to be pre-filled, Log for November was not maintained after Nov. 24, 2019. Review procedures with staff. Ensure that Logs are maintained accurately and as per the Corporate Sanitation Plan.
- Reviewed cleaning and sanitizing procedures for serving spoons in olive/ antipasti self serve station - no concerns. Serving spoons are replaced, washed and sanitized every 2-3 hours.
- Knives, cutting board, and serving utensils appear maintained in a sanitary condition.
- General sanitation of premises appears satisfactory.
- No pest activity noted.
