Sandwich display cooler: 2.9 deg C
-All prep coolers in front counter /food service area at <4 deg C
-Upright cooler in back room at 3.9 deg C
-All freezers at -18 Deg C or less
-Fried chicken hot holding unit at 73 deg C
-Hot dog roller machine at 65 deg C
-Discussed pizza hot holding which was at 55 deg C (less than the required 60 deg C)--> they are discarded after 1 hour according to the staff.
-Discussed chopped onions in the hot dog toppings station (prep cooler inserts)--> must be discarded after 4 hours. Record/time track when the onions are placed into the unit.
-Quat sanitizer in spray bottle at 200 ppm Quats
-Foods in cooler covered
-No signs of pests at time of inspection
-Observed proper handwashing during inspection
-Food safe ceritficate of staff preparing chicken was on site --> reminder that all foodsafe certificates issued before July 28, 2013 will expire in July 28, 2018. Refresher course can be taken online.
