Observation (CORRECTED DURING INSPECTION): Inserts of cheeses and cut vegetables inside the prep cooler were measured at 9C. Ambient air temperature of the cooler also measured at 9C.
Corrective Action(s): Move aforementioned food to a functional cooler. Any potentially hazardous food must be stored at 4C or less.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): 1. Meshed potato was in a hot holding unit measured with a temperature of 54C.
2. Cooked rice in 2 rice cookers were measured with an internal temperature of 55C.
Corrective Action(s): Hot food must be hot held at 60C or above. Reheat the aforementioned food to 74C again and hot hold them at 60C or above. Switch out the rice cooker if it can not hot hold rice at 60C or above.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Glass washer unable to dispense any concentration of food sanitizer on the surface level. Upon checking, one chlorine and one iodine sanitizer stock bottle were connected to the machine. Detergent bottle was not available.
Corrective Action(s): Wash and sanitize all glasses that were washed by the sanitizer today.

Observation: 1. Prep cooler near the end of the cook line measured with an ambient air temperature of 9C.
2. Glass washer was not dispensing any concentration of food surface sanitizer.
Corrective Action(s): 1. Service / fix the prep cooler to ensure an ambient air temperature of 4C or less can be maintained. Do not use this cooler to store any potentially hazardous food until serviced.
2. Manager serviced the glass washer and 100 ppm bleach sanitizer was measured from the glass washer from the detergent dispensing spray. Continue to service the glass washer to ensure sanitizer spray port can properly spray 12.5 ppm iodine sanitizer or 50 ppm bleach sanitizer. Correct by: Aug 24, 2023.

Routine inspection:
- Freezers (drawer and stand-up) were functional.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm Quats sanitizer available in spray bottles. Ensure one spray bottle closely available for each food prep station.
- Low temperature dishwasher dispensed 50 ppm bleach sanitizer.
- Ice machine and vegetable cutters maintained in sanitary condition.
- General sanitation satisfactory.
- No pest activities observed at the time.
