Observation: Dishwasher technician on site has indicated that the high temperature dishwasher is to be fitted with a chlorine line. Currently, the high temperature dishwasher is still only achieving 60-66 deg C on rinse cycle at dish level.
Corrective Action(s): Dishwasher is to be fitted with chlorine sanitizer line such that it achieves 50 ppm chlorine residual on rinse cycle at dish level. Test strips must be available for staff to test the dishwasher daily.

In the mean time, dishes are being washed/rinsed/sanitized in the large 3 compartment sink.

Follow up inspection conducted:
Cleaning and organization has greatly improved in the following areas:
1) In the main level dry storage room, all food bins have covers and are much more organized
2) In the downstairs dry storage area, old items have been removed
3) Dishwashing room with 3 compartment sink: no pots or buckets stored on the floor, sanitation and organization improved greatly.

All rodent feces that were previously noted have now been removed. Did not observe any new rodent feces on site, several mice traps (sticky and boxes) have been placed throughout premises. Pest control report dated March 8 provided. As per the pest control recommendations: you must make sure food is always stored off the floor, and in plastic/glass food grade containers. Regular cleaning is very important. Pest control visits to occur twice every month until inspector notifies that once a month is a sufficient.
