Observation: Upright glass-door cooler storing chopped vegetables and bean sprouts was being serviced at time of inspection.

Comments

- Follow-up to routine inspection conducted on September 25, 2023 (report #YTAN-CVZLVB).
- Floor drain in dishwashing area has been unclogged. *Ensure to keep this area dry and clean (free of any pooling water).
- Ventilation canopy filters were deep-cleaned last week, however filters above the wok station will require cleaning again soon. Ensure to clean your ventilation canopy filters on a weekly basis.
- Areas behind/under/around cooking equipment have been cleaned.
- Sinks were noted to be in sanitary conditions.
- No improper thawing noted at time of inspection.
- No duck blood found onsite. Previous menu item containing duck blood has been removed from menu(s).
*Ensure to continue with your daily and weekly deep-cleaning efforts. Dry ingredient bins, lids, and scoops need to be cleaned and sanitized regularly as well.
*Fly activity is still significant. See violation code 304 above - have a professional pest control company provide weekly servicing until the issue is resolved.
