Observation: A shelf and chair have been placed in the kitchen obstructing the corner handwashing sink.
Corrective Action(s): Immediately. Remove the chair and move shelf bit. The hand sink must be available/easy accessible/ all the time.

Observation: -Multiple food items stored uncovered in coolers.
-Food stored in open tin containers in the walk-in cooler and small prep. cooler (eg., tomato paste, pulp).
- Ripped plastic bag with frozen corn in a chest freezer.
-Personal belongings (cell phones) stored in spoon container and on food preparation counters.
Corrective Action(s): -Cover all food with proper lids or plastic wrap.
-Food must be transferred into food grade containers with lids to avoid leach harmful compounds into your food.
- Ripped bag with corn must be removed from the freezer.
- Sanitize spoons. Keep personal belongings away from food preparation and utensils storage containers/holders.

Observation: Several flies in the restaurant kitchen.
Corrective Action(s): Immediately. Close the back door (see violation 305). Rectify the issue with flies.

Observation: A back door was open at the time of inspection.
Corrective Action(s): A screen door is required for a back door if it is to be left open.

Observation: Significant accumulation of dust and grease in ventilation hoods.
Corrective Action(s): Fan hoods must be serviced (clean) as per the scheduled service label.

Observation: Dirty bare wood shelves and a pressed wood sheet under a microwave on the kitchen storage shelf.
Corrective Action(s): Bare wood cannot be properly cleaned and sanitized. Therefore, replace or sealed it.

Observation: Broken ladle in a container with sauce, cracked plastic storage containers and bowls that in use to dispense dry food.
Corrective Action(s): Repair or replace any equipment or utensils that are damaged or have loose parts.

Observation: Office room, which was used as a storage before, used as a beverages preparation area now.
Corrective Action(s): Immediately. Stop any food preparation in the storage room. It was no approval for such changes.

Comments

Kitchen:
-Prep. table inserts cooler at 4.0°C.
-Walk-in cooler at 4°C (vegetables).
-Walk-in cooler/freezer combo - cooler < 4.0 C; freezer at - 18 C.
-Corner hand sink supplied with hot/cold running water; liquid soap; hand drier - available.
-Hand sink near the walk-in cooler/freezer combo supplied with hot/cold running water, liquid hand soap, and single sue paper towels.
-Surface Chlorine sanitizer supplied in labeled bucket at 100 ppm. Balk Bleach is available on site.
-Low temperature dishwasher measured 100 ppm Chlorine at utensil surface during final rinse cycle.

Storage area:
-All dry goods and cans stored safely at the time of inspection (off the floor & in pest proof containers with proper lids).
- Storage - organized.

Bar in the party room:
-Note: Not in use at the time of inspection.
Friendly reminder: Hand sink has to be supplied with liquid soap and paper towel; cold and hot running water during operation hours.
Note: Under counter cooler is turned on but no food in it.

Front:
- Front area has been changed.
a) Beverage cooler is removed.
b) Reception counter is removed.


General
-Washrooms used by staff are in sanitary condition. Washroom hand sinks supplied with hot and cold running water, liquid hand soap, and paper towels.
--General sanitation - acceptable but required improvement in some areas (corners and under equipment)
- Chest freezer in the office/storage area - satisfactory.
- Small prep.cooler at 4.0 C.


Recommendation:
- Do not use garbage bags for food storage. If packaging is used in a way that it was not designed for, chemicals could transfer into the food. Observed several garbage bags (3) with food in the walk-in freezer/frozen prepackaged chicken from approved source stored in a garbage bag/. This is not the best practice.
- Do not keep food that is unfit for human consumption. An uncovered tray with old/rotten vegetables stored on a top shelf in the walk-in cooler. Food is discarded at the time of inspection.
- Broken thermometers for cold units must be replaced or removed from cold units.
