Comments

- Routine inspection for pizza/retail area, which is separate from the meat processing area.
- Ready-to-eat menu items include pizza and fried chicken only. Smoking of meats also done on this side of the facility.
- Food safety plan for fried chicken received. **Food safety plans for pizza and smoked meats is also required for our records. Please email directly to health inspector.
- Hand washing sinks in pizza kitchen, front retail counter, and staff washroom were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution available in spray bottle at 100 ppm.
- Three-compartment sink available and maintained in sanitary conditions.
- Pizza prep cooler not in use.
- Back glass-door cooler, meat display cooler, and beverage cooler measured at 4C or colder.
- Freezer at front storing frozen meat products (prepared in meat processing area) for retail measured at -18C.
- No hot-holding at this facility.
- Food storage practices satisfactory. All food stored properly covered and not directly on floor.
- Food-related equipment maintained in sanitary conditions, however attention needed for inside of meat display cooler (see violation code 306 above).
- Meat slicer was in use at time of inspection. Ensure to disassemble for thorough cleaning and sanitizing after use.
- General sanitation satisfactory
- No signs of pest activity noted at time of inspection.
